We're Moving!

Hi All!
We're moving to Rolla THIS WEEKEND!!! :D I'm super excited that God has blessed us in finding a cute, 2 bedroom rental house in a nice neighborhood! We have a fenced in backyard (perfect for our little cutie, Payson) and nice neighbors. =) 
I will be taking pictures of the moving out and moving in process! Evan is also really happy about this, because he will have carpeted floors to practice his crawling skills on!! Joel has worked so hard to provide this new place for us - he is the BEST! 
We will still be using our little farm house to do laundry in and as a guest house. Our sheep and the horse will stay on the farm and we'll come visit/manage them each week. We did have to give away all but one of our dogs, but for this season of life that's the best way to have it. Payson (Shih-Tzu) is coming with us, and will enjoy all the attention! She is really good with Evan, and he loves playing with her on the floor. =) 
Side note: Praise God for all the rain!!! We really needed it! (And my allergies are happy for the moment.)

Farm Fun

Oatmeal Pancakes

I'm here to tell ya, friends. These oatmeal pancakes are the best I've ever had - and they're sugar-free!! 
Joel and I like to have breakfast for dinner, and this is a good way to make it a healthy meal. I got the recipe from my new favorite cookbook called "Wholesome Sugarfree Cooking". 
Oatmeal Pancakes
2 C buttermilk (regular milk works just fine too)
1 1/2 C quick oats
2 eggs, separated
1/3 C butter
1 tbsp. honey
1 tsp. soda
1 tsp. salt
1 tsp. baking powder
1 C whole wheat flour
Pour buttermilk over oats and let stand for five minutes (This step is important!). Beat egg yolks. Add butter, honey, soaked oats, then dry ingredients. Fold in beaten egg whites. Drop by tablespoon onto a hot griddle to fry. 
Yummy!!! If you are trying to keep off of sugar like I am, try your pancakes with butter and either applesauce or dark Karo syrup!
